Chengdu
Chengdu, formerly transliterated as Chengtu, is the capital of Sichuan province, of Southwest China, maintaining sub-provincial administrative

status. Chengdu is also one of the most important economic centres, transportation and communication hubs in Western China. According to the 2007 Public Appraisal for Best Chinese Cities for Investment, Chengdu was chosen as one of the top ten cities to invest in out of a total of 280 urban centers in China. More than four thousand years ago, the prehistorical Bronze Age culture of Jinsha established itself in this region. The fertile Chengdu Plain, on which Chengdu is located, is also known as "天 府 之国 " (Tian fuzhiguo), which literally means "the country of heaven", or more often seen translated as "the Land of Abundance". It was recently named China's 4th-most livable city by China Daily. Sichuan cuisine is a style of Chinese cuisine originating in the Sichuan Province of southwestern China famed for bold flavors, particularly the pungency and spiciness resulting from liberal use of garlic and chili peppers, as well as the unique flavour of the

Sichuan peppercorn . Peanuts, sesame paste and ginger are also prominent ingredients in Szechuan cooking. Although the region is now romanized as Sichuan, the cuisine is still sometimes spelled 'Szechuan' or 'Szechwan' in United States. There are many local variations of Sichuan cuisine within Sichuan Province and the Chongqing Municipality, which was politically part of Sichuan until 1997. The four best known regional sub-styles are Chongqing style, Chengdu style, Zigong style, and Buddhist vegetarian

style.UNESCO has declared the city of Chengdu to be a city of Gastronomy in 2011, mainly because of its Szechuan style of cooking. Chengdu is located at the western edge of the Sichuan Basin and sits on the Chengdu Plain; the dominating terrain is plains. The prefecture prefecture ranges in latitude from 30° 05' to 31° 26' N, while its longitude ranges from 102° 54' to 104° 53' E, stretching for 192 kilometres (119 mi) from east to west and 166 kilometres (103 mi) south to north, administering 12,390 square kilometres (4,780 sq mi) of land.

Chengdu’s culture
First one_ No matter how excellent the dialect of Sichuan you speak,if you

show plenty of interest of pandas in front of others,you are not unable to be regarded as the local people in Chengdu.

Second_ Don’t say that you do not like sitting in the teahouse and enjoy the tea,it will make others feel that you are just a normal animal that only caring about making money.

Third_ When you drive in the streets of Chengdu,please don’t turn left.Too many signs show that it’s not allowed for you to turn left.Chengdu is such a city that you can’t turn left when you drive most of the time.

Fourth_ Remember that you’d better not mention that you don’t like Mahjong,maybe the person whom you’re talking with has just finished playing Mahjong.

Fifth_ Never think that the dialect in Chengdu is soft and it sounds nice. The quarrel between most people is just “Whiter than your teeth”.If you have a dictionary of the dialect in Chengdu,then you can understand the words that the people saying have the ability that can make some chicken-hearted persons want to kill themselves.

Chengdu’s snacks
Most of Sichuan food are quite spicy. You should be sure to order not spicy,little spicy food or very spicy.If you are not accustomed to it yet ,a small dish of soy sauce works much better than to quell the spicy taste .however ,if you

are used to authentic Indian or Thai food,the level of spiciness in Sichuan food should be no problem at all.But I must mention that Sichuan food also makes heavy use of Sichuan pepper ,which looks like but is not a true peppercorn ,and causes your mouth/lips to become somewhat numb .Sichuan pepper i s added in most spicy dishes .If you can eat/prefer spicy food but d0 not like Sichuan pepper,you need to order so .However ,authentic Sichuan tastes commonly used both Sichuan pepper and chili peppers in proportion ,so I strongly recommend you to try the authentic versions with the Sichuan pepper before making your decision .

Hotpot

The spiciest food in Chengdu is hotpot,although its tradition originated in Chongqing, yet it is quite popular in Chengdu. Sichuan

hotpots are basically a big pot of spicy soup and spices simmering in a hole in the middle of your table. While the hot pot keeping simmering, ingredients have already placed into the pot Patrons choose from a large selection of meats,vegetables and other add-ins.Most popular

includes:lamb,mushrooms, beef, tofu, quail eggs,potatoes and various others (pork , fish balls, carrots, and even pig's brain!) You can choose spicy pot or non spicy pot.With spicy hot pots, unlike Eastern hot pots, the soup is NOT for drinking,instead,fish out your cooked items with chopsticks (do not fish the liquid out with a spoon, it is too spicy even for locals to drink; the fished out vegetables are spicy enough),dip them in the small dish/bowl of oil provided to each person, and just enjoy.

Chenmapo soybean curd

Chenmapo was created in 1862 at first. The store which was called Chen Xingsheng Restaurant firstly was set near the North Wanfu

Bridge outside Chengdu. And then,the small hotel was conducted by his wife ,because the storekeeper early died. The boss was called Chenmapo because of the pock-marks on her face. She was good at cooking the domestic dishes of Sichuan, particularly make the bean curd and she had a set of special cooking technique. The color and flavors of the bean curd are completed, it was outstanding and deeply got people fancy. Therefore,so many people came to try it. It was listed as the famous delicious food of Chengdu at the end of the Qing Dynasty. It is also famous now and is apart more than 140 years from now. The other dishes of Sichuan taste also get the people to approve. It also spreads its fame from home to the outside world and gets both domestic and international hearties’/gourmets’complement.

Lai tang yuan

Lai tang yuan was named after the boss of the the Old Store Laiyuanxing. And it was created firstly in the period of Guangxu at the end of Qing Dynasty and it is apart from now for more than 100 years. Firstly, people picked the load to walk a lane of street and sell Lai tang yuan by hawking, and then set the store management. In order to achieve the anticipating goodness, the manufacture pays attention to its quantity and quality.
